The Chardonnay and Pinot Noir for this wine comes from select vineyards in the Willamette Valley, Crawford Beck Vineayrds in Amity-Eola Hills AVA and Carabella Vineayrds in Chehalem AVA.
This sparkling is made in the traditional champagne method; Chardonnay and Pinot Noir fermented separately in barrel, blended to meet our preferred characteristics, bottled with secondary yeast to ferment in bottle for up to 2 years, disgorged, dosage, corked, and labeled.
The 2017 Sparkling wine begins in the nose with stony minerality, lychee, wet stone and fresh green apples. The palette opens with citrus and grapefruit rounded out by Fuji apple and honeysuckle, then continues with mineral stone and flint. The finish is silky, creamy, and dry. While crisp and clean, it has a long round finish.
