The Vineyards:
The Chardonnay and Pinot Noir for this wine comes from select vineyards in the Willamette Valley, Crawford Beck Vineyards in Amity-Eola Hills AVA, and Carabella Vineyards in Chehalem AVA.

Champenoise Methode:
This sparkling is made in the traditional champagne method; Chardonnay and Pinot Noir are fermented separately in barrel, blended to meet our preferred characteristics, bottled with secondary yeast to ferment in bottle for up to 2 years, disgorged, dosage, corked, and labeled.

The 2019 Sparkling wine begins in the nose with lemon, lime, grapefruit peel, Asain pear, and green apple. The palette opens with citrus fruits, grilled pineapple, mineral stone, and hints of brioche. The finish is well-rounded, yet crisp and clean, with lingering hints of brioche on the palate.

Tasting Notes
The 2018 Sparkling wine begins in the nose with stony minerality, grapefruit peel, almond, and green apple. The palette opens with sweet-tart citrus and grapefruit rounded out by lemon drop and pineapple, then continues with mineral stone and flint. The finish is silky, and dry. While crisp and clean, it has a long round finish.
