2016 Aspen Chardonnay
2016 Vintage Summary
The 2016 growing season began with an especially early bud break. The average daily temperatures were slightly warmer, while the nights were cooler. The year ended with a beautiful ripening period of cooler than normal temperatures in the month of September, leading to a little more rich fruit characteristic and not quite as much minerality and acidity.
Aromatics of subtle oak compliments the light minerality, which carries onto the mid-palate of lemon-lime rind, cucumber, and thyme. The finish is smooth and light, with balanced viscosity and acid.
This lightly oaked chardonnay will compliment sea scallops with puréed cauliflower, grilled oysters, fresh cod or halibut.
